“Pumpkin Chili”

Ingredients:
1 lg round pumpkin 1 tsp chili powder
3 lbs round beef 1 tsp sugar
1 med. onion 3 to 4 cups water (if needed)
1 cup canned pumpkin
1 tsp salt & pepper
2 tsp pumpkin pie spice
2 cans of tomato soup
2 cans (16oz) hot chili beans
2 bottles (12oz) chili sauce
Instructions:
Cut upon top of pumpkin and scoop the innards’ out. Place in strainer and rinse with cold water, set aside. Chop up onion then in lg stove-top pan cook ‘til lightly brown, add in beef. Cook ‘til done then drain out grease. Add remaining innards’, canned pumpkin, salt & pepper, pie spice, tomato soup, chili beans, chili sauce, chili powder, sugar, and water (if to thick). Bring to boil. Reduce heat – simmer 1 hour (low heat).
While that’s going on, clean out lg pumpkin. Rinse out with water. Let chili set for 30 to 45 mins, then place inside of pumpkin to serve.
